It’s Friday, and you know what that means? Time to treat yourself for surviving the week! I rarely post about food on my blog, unless I find a recipe that I absolutely HAVE to share. In the past, notable mentions are 3 ingredient peanut butter cookies and 3 ingredient pancakes.
Well, there’s a new favorite dessert on the block. My current obsession is microwave chocolate peanut butter cake. This takes five minutes, no joke, doesn’t create a lot of dishes, and uses ingredients that everyone has in their pantry. So, when you want a quick dessert, this cake will save the day! Note: this recipe is not my own. It comes from thecomfortofcooking.com! I found the recipe when I was feeling lazy and wanted a quick dessert to make that didn’t require cooking. Since this cake is eggless, you can eat the batter if you don’t have a microwave! It’s your life, man, do what you want.
Just look at that gooey peanut butter. How can you resist?! This cake is also super Instagrammable-if that’s a word! Whenever I make these, I add a little bit of brown sugar to hold it together, and some powdered sugar on top.
I’m not sure if the recipe states this or not, but make sure you grease the inside of the mug. The cake sticks to the side otherwise, and it will take a lot of scrubbing to get it clean.
1/4 cup all-purpose flour
2 Tablespoons unsweetened cocoa powder
2 Tablespoons granulated sugar
1/4 teaspoon baking powder
1/4 cup milk
2 Tablespoons butter, melted
1 Tablespoon creamy peanut butter
1/4 teaspoon vanilla extract
1 Tablespoon mini chocolate chips
In a small bowl, whisk flour, cocoa powder, sugar and baking powder until completely combined. Whisk in milk, butter and vanilla until smooth. Fold in chocolate chips. Pour batter into a large microwave-safe mug.
Dollop peanut butter into center of mug, gently pressing down until even with top of batter. Microwave on high for 1 minute. Allow to cool for 1 minute before serving.
